Ingredients: 1 box whole wheat couscous 3 Tbsp walnuts, crushed 2 Tbsp olive oil 2 Tbsp lemon juice 2 teaspoons honey 1/2 teaspoon ground coriander 1/2 teaspoon grated peeled fresh ginger 1/2 cup diced apple 1/2 cup shredded carrot 1/4 cup thinly sliced green onions 2 tablespoons chopped fresh cilantro
Directions: 1. Prepare couscous according to package directions. 2. in a small bowl, whisk together olive oil, lemon juice, honey, coriander and ginger. Set aside. 3. Combine apple, carrot, green onions and cilantro with couscous. Drizzle dressing over the couscous mixture and stir to coat evenly.
